Perhaps unusual, the happy union between lemon and hazelnut is present in the recipe cookbook of the Italian patisserie, not in vain the Piamonte is a D.O. of prestige in the production of hazelnut. To enhance the toasted flavor we have used Japanese Hojicha as a base tea together with green tea. Essential lemon oil and lemon peel for the fresh sensation and vanilla and creamy aroma to have a flavor of pastry. Idea emerged after a talk with pastry chef Yann Duystche.
