This organic Oolong is grown in a 5 hectare plantation around Doi Mae Salong at an altitude of 1,400 meters. The Ruan Zhi varietal num. 17 from the mountains of Ali Shan in Taiwan grows in these mountains recently (since 1994). Selected expressly for its good acclimatization to the land, its consistent good quality during the different seasonal cycles of the year, its versatility to be able to be manufactured in various types of final tea and, above all, for its characteristic and dominant sweetness. The plucking and manufacture of this tea begins at the beginning of the rainy season in May. 2 leaves and 1 bud are picked. The manufacture is very complex starting with sun drying for 4 hours where the leaves are turned over several times. A drying in bamboo trays for 5 hours precedes a 30 cm layer fermentation for 3 or 4 hours and a subsequent drying in a cylinder for 7 -8 minutes at 280 degrees. A first rolling for 3 minutes followed by 15 minutes left to rest followed by 5-6 minutes of baking at 100 degrees. Pressed and rolled once more before making a selection of defects by hand to finish with an oven drying for 3 hours at 100 degrees. This meticulous and long process allows us to enjoy a cup of extraordinary aromatic complexity with floral tones .
